A new recipe every day
For 4 people
1 pot of 400g / 14 oz reduced-fat fromage blanc
1 tablespoon of potato starch
1 organic lime
1 sachet of vanilla sugar
70g / 2 ½ oz of caster sugar or fructose
500g / 1 lb 2 oz of mixed berries
80g / 3 oz of speculoos.
Pre-heat your oven to gas mark 6 / 180°C / 350°F.
Place the fruit, the lime juice and half of the sugar in a bowl and stir until obtaining a nice sauce.
Place the fromage blanc, the separated egg yolks, the rest of the sugar, the starch, the vanilla sugar, and some lime zest into a mixing bowl and stir. Add a little water if necessary to avoid lumps.
Whisk the egg whites with a pinch of salt until they are nice and firm.
Delicately add the egg whites to your mixing bowl.
Place the speculoos in a round mold and pour the preparation over the top.
Bake for 20 minutes. Leave to cool down before unmolding the cheesecake.
Keep in the fridge with the sauce up to serving time.Enjoy your meal!
