Low fat couscous

For 4 people

Ingredients

600g / 1 lb 5 oz of mixed vegetables - carrot, turnip, zucchini (courgette)…

4 beef meatballs

4 chicken thighs

2 teaspoons of paprika

1 teaspoon of el raout spice

Harissa in a tube

210g / 7 ½ oz of fine couscous

Preparation

Grill the chicken and the meatballs in a frying pan with no oil.

Place the vegetables, spices and grilled meat in a large cooking pot.

Pour water over the top and add salt to taste.

Cook on very low heat for 3 hours.

Steam cook the couscous in a coucoussière (tiered steam cooking pot).

Present the stock and the couscous in separate dishes and serve your guests
