For 4 people
800g / 1 lb 12 oz of potatoes
3 big onions
8 white eggs
8 teaspoons of rapeseed oil
Powdered garlic
Parsley
Cherry tomatoes
Lettuce leavesBeat the eggs in a bowl and sprinkle the garlic and parsley.
Add salt and pepper to taste.
Peel the potatoes, dice them finely and fry them in a pan in a little oil for about 20 minutes.
Thinly slice the onions.
Add the potatoes and the onions in the bowl with the eggs.
Heat some oil in a different frying pan and pour the mixture.
Cook for 5 minutes and turn the omelette over.
Cook for 5 minutes on the other side.
Decorate the plates with a slice of lettuce, a few cherry tomatoes cut in half and top with a good portion of omelette.Enjoy your meal!
