Hake domes with surimi

For 4 people

Ingredients

4 filets of hake

2 eggs

160g / 5 ¾ oz of reduced-fat fromage blanc

1 lime

120g / 4 ½ oz of grated surimi

Powdered cilantro (coriander)

Fresh flat-leaf parsley

Preparation

Pre-heat the oven to gas mark 6 / 180°C / 350°F.

Grate the lime for the zest.

Place the filets of hake, the lime juice, egg whites, powdered cilantro and the fromage blanc in your blender.

Add salt and pepper and blend.

Pour the mixture into individual oven-ready ramekins and cook for half an hour in a bain-marie.

Sprinkle with grated surimi, lime zest and flat-leaf parsley before serving.
