Stuffed tomatoes

For 4 people

Ingredients

Lettuce leaves

8 large tomatoes

150g / 5 ½ oz of minced veal

250g / 9 oz of minced beef (low fat)

1 egg

Garlic and onion

Parsley

50g / 1 ¾ oz pine nuts

Preparation

Cut the top of the tomatoes and empty part of the flesh.

Pre-heat your oven at 170°C / 340°F.

Place the meats, pine nuts, garlic, onion and egg as well as the tomato flesh in a blender.

Add salt and pepper before blending the mixture.

Use the mixture to stuff the tomatoes.

Place the stuffed tomatoes in the oven for 35 minutes.

Serve in soup plates, with a lettuce leaf as garnish.
